- Three ounces of dark chocolate
- Two tablespoons of cocoa powder but not the one used for chocolate drink mix
- Six ounces or three fourth cup of softened butter
- A teaspoon of vanilla extract
- Six ounces or ¾ packed of soft light brown sugar
- Three large free range eggs which are separated
- Six ounces or one and a half cups of self raising flour
Ingredients for the frosting:
- Eight ounces of plain chocolate
- Eight TBS double cream
- Eight ounces or two cups of icing sugar which are sifted
- Two to three TBS freshly boiled water
Heat the oven ahead of time at a temperature of 180 degrees Celsius or 350 degrees Fahrenheit or turn the knob of the oven to gas mark 4.
Place butter and line the base of two seven-inch round sandwich tins and then set aside first.
In a bowl, put the cocoa powder, butter, vanilla and chocolate and stir.
Place the combined ingredients over a pan that contains simmering water. Heat and keep on stirring in order to melt. Whisk together until such time that it will be smooth. After a while, let it cool slightly.
Cream together egg yolks and sugar until they mixture becomes light and creamy. The chocolate mixture should be folded at the outset and then fold in the flour with care.
Beat the egg whites until soft peaks are formed. Fold a tablespoon in the cake mixture in order to loosen and then fold in what is remaining until the blend is smooth and there are no white streaks present. Separate evenly the mixture between the two tins. Smooth over and then create a tiny hollow at the middle of each.
Bake for about thirty to thirty five minutes until it has risen and the top portion will spring back when the cake is lightly touched.
Take the cake out of the oven. Leave in the tins for approximately ten minutes before you turn out into the wire rack to cool the cake completely.
Put the cream and chocolate inside a bowl and then into a pan of simmering water. Make sure to heat and whisk until the chocolate will melt in the cream and the blend will become smooth. Take it out of the heat and slowly beat in the icing sugar which has been sifted adding water if necessary in case the mixture will become very stiff. You need to have a mixture that has a spreadable consistency.
Utilize one third of the frosting to squeeze in the layers all together and then utilize the rest to frost the top portion and the sides. Before serving, cut it into wedges.
You can bake the cake in a single layer inside a deep seven-inch tin as an alternative. But take note that it will probably take ten to fifteen minutes longer to bake so you need to make adjustments with your time appropriately. With this cake, all you need to do is to pile all the frosting at the top as well as the sides.
